Makes 4 Servings
What you Need:
- 1/4 cup mayonnaise
- 2 tbsp sour cream
- 1 canned chipotle chili pepper in adobo sauce, minced
- 1/2 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 cups chopped cooked chicken breast
- 1 cup diced unpeeled red or green apple
- 1/2 cup chopped red bell pepper or roasted red peppers
- 1/2 cup diced celery
- 1/3 cup raisins
- 1/3 cup diced red onions
- 1 1/2 ounces pecan pieces, toasted
- Stir mayonnaise, sour cream, chipotle pepper, cumin, salt and black pepper in medium bowl until smooth and well blended.
- Add chicken, apple, bell pepper, celery, raisins and red onions; toss to coat. Stir in pecans just before serving.
